Ingredients
  

  • ¾ cup cooked bacon bits
  • 7 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded Colby Jack cheese
  • ¼ tsp salt
  • ¼ tsp black pepper
  • cooking oil spray

Instructions
 

  • Preheat oven to 325°F or 163°C and grease a 12 cup muffin pan with cooking spray.
  • Whisk eggs in a large bowl until combined.
  • Stir in bacon bits, cottage cheese, shredded cheese, salt, and black pepper until evenly mixed.
  • Divide the mixture evenly among the muffin cups.
  • Place a pan of water on the lower oven rack to create moisture.
  • Bake on the upper rack for 23 to 25 minutes.
  • Check doneness with a toothpick. If it comes out clean, remove from oven.
  • Cool briefly, then remove the egg bites while still slightly warm.

Notes

Remove the egg bites shortly after cooling to reduce sticking. A water pan helps create a softer texture. Cottage cheese keeps the egg bites moist and creamy.
